Ingredients

  • 2 cups Dreamfields® Elbows
  • 6 cups broth
  • 1 (15 oz) can mixed vegetables
  • 1 (14.5 oz) can diced tomatoes in juices
  • 1 (15 oz) can white beans, drained, divided
  • 2 teaspoons poultry seasoning*
  • 2 (12.5 oz) cans cooked turkey (or chicken)

Directions

  1. Cook pasta according to package directions; set aside.
  2. In large saucepan or Dutch oven, combine broth, vegetables, tomatoes, and poultry seasoning. Set aside 1/2 cup of the white beans, adding the remainder to the broth mixture. Bring to a boil, reduce heat to simmer. Remove 1/2 cup of the hot liquid and combine with the reserved 1/2 cup beans. Using a fork, mash the beans with the hot liquid until smooth. Stir the bean mixture back into broth; continue to simmer for 10 minutes. Add chicken and cooked pasta; simmer for addition 3-4 minutes until warmed through.

Notes:

*If you don’t have poultry seasoning, you can substitute 1 ½ teaspoon dry sage and ½ teaspoon dry thyme.
