Original Recipe: Southwestern Chicken Rotini Soup

Ingredients

  • 1 cup Dreamfields® Rotini, uncooked
  • 2 tablespoons olive oil
  • 2 teaspoons jarred minced garlic
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dry oregano
  • 1/2 teaspoon dry thyme
  • 1/2 teaspoon dry cilantro
  • 2 cups chicken broth
  • 1 (16 oz) jar salsa
  • 1 (15 oz) can diced tomatoes
  • 3 tablespoons tomato paste
  • 2 (12.5 oz) cans cooked chicken, drained
  • 1 (15 oz) can black beans, drained
  • 1 (11 oz) can corn, drained

Directions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In large stockpot or Dutch oven, heat oil over medium-high heat. Add garlic, dry spices, and herbs; sauté until fragrant. Add broth, salsa, tomatoes, and tomato paste. Bring pot to boil, then reduce heat to medium. Simmer uncovered for 20 minutes, stirring occasionally.
  3. Stir in chicken, beans, corn, and pasta. Simmer 3-5 minutes until heated through
