Tuscan Pasta with Chicken

Ingredients

  • 8 ounces Dreamfields Angel Hair

  • 2 teaspoons olive oil divided

  • 1 pound boneless, skinless chicken breat cut into cubes

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon Italian seasoning

  • 1 package mushrooms thinly sliced

  • 3 cloves garlic minced

  • 1 can Italian-style diced tomatoes undrained

  • 1/2 cup half & half

  • shredded Parmesan cheese


Directions

  1. Cook pasta according to package directions; set aside.

  2. Meanwhile, heat large skillet over medium-high heat. Add 1 teaspoon of the olive oil to pan, swirling to coat. Season chicken with salt, pepper and Italian seasoning. Add chicken to pan. Cook 5 to 6 minutes until browned and cooked through, stirring frequently. Remove from pan; keep warm.

  3. Add remaining 1 teaspoon olive oil to pan. Add mushrooms. Cook 2 to 3 minutes until lightly browned stirring occasionally. Add garlic. Cook 1 minute, stirring frequently. Add tomatoes. Bring to boil; reduce heat and simmer 3 to 5 minutes, stirring occasionally. Stir in half-and-half. Add chicken to pan. Continue cooking, stirring frequently, until heated through. Season with salt and pepper, as desired. Remove from heat.

  4. Toss with pasta. Top with Parmesan cheese, if desired.
