Strawberry, Spinach & Pecan Pasta with Lemon Poppy Seed Dressing

Ingredients

  • 2 cups Dreamfields Elbows

  • 2 cups baby spinach leaves rinsed and drained

  • 1 cup strawberries sliced

  • 1/4 cup pecans coarsely chopped, toasted if desired

DRESSING:

  • 1/4 cup lemon juice

  • 1/4 cup light mayonnaise

  • 3 tablespoons white vinegar

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons honey

  • 1 tablespoon Dijon mustard

  • 1 tablespoon poppy seeds (heaping tablespoon)


Directions

  1. In medium bowl, whisk together salad dressing ingredients until blended. Cover; chill at least 1 hour before serving.

  2. Cook pasta according directions. Place pasta in large bowl.

  3. Add spinach, strawberries and pecans to bowl with pasta. Add chilled dressing; toss gently to combine.
