  • 1 box Dreamfields Spaghetti
  • 2 tablespoons extra virgin olive oil
  • 1/2 small onion minced
  • 6 ounces button mushrooms sliced
  • 2 sprigs fresh thyme
  • 5 ounces baby spinach fresh
  • 1/4 cup heavy whipping cream
  • Parmigiano Reggiano cheese grated (optional)
  • kosher salt and black pepper


  1. Cook pasta according to package directions. Reserve 1/2 cup cooking liquid before draining; set aside.
  2. Meanwhile, heat oil in large skillet over medium until hot. Add onion; cook 5 minutes or until soft, stirring occasionally. Add mushrooms and thyme; cook and stir 5 minutes or until soft, stirring occasionally. Season with salt and pepper, as desired. Add spinach and cream; stir to combine. Remove from heat.
  3. Add pasta to skillet; toss to combine. If mixture is too thick, add reserved cooking liquid to reach desired consistency. Check for seasoning. Add cheese, and additional salt and pepper, as desired.
