Pickled Beet Thai Pasta Salad

Ingredients

  • 8 ounces Dreamfields Rotini
  • 1-1/2 cups tofu cubed
  • 1 cup sugar snap peas trimmed and sliced lengthwise
  • 1/2 cup red bell pepper minced
  • 1/3 cup cilantro chopped
  • 2 tablespoons fresh mint chopped

PICKLED BEETS:

  • 2 beets trimmed, thinly sliced
  • 1/2 small onion thinly sliced
  • 1-1/2 cups rice vinegar

THAI SAUCE:

  • 1/2 cup peanut butter
  • 2 tablespoons rice vinegar (or use beet pickling liquid)
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons honey
  • 1-1/2 tablespoons sesame oil

Directions

  1. For Pickled Beets, combine beets, onion and rice vinegar in a jar or other container with lid. Cover and refrigerate overnight.
  2. Cook pasta according to package directions. Rinse pasta in cold water; drain again. Place pasta in large bowl; set aside.
  3. Meanwhile, in medium bowl, whisk together Thai Sauce ingredients. Add half of sauce to pasta; toss to combine.
  4. Drain beets (reserve liquid for sauce or discard). Add beets, onion, tofu, peas, bell pepper, cilantro and mint to pasta. Toss to combine. Add additional Thai Sauce, if desired.
  5. Refrigerate, covered, about 2 hours or until chilled.
