Ingredients

  • 1 box Dreamfields Rotini
  • ¼ cup crumbled bacon (approximately 4 slices microwaveable fully cooked bacon) or bacon bits
  • 1 (14.5 oz) can diced or petite diced tomatoes, drained well

Vinaigrette

  • 1-2 tablespoons Dijon mustard
  • 1 teaspoon jarred minced garlic
  • ½ dried dill
  • ½ teaspoon dried parsley
  • ½ teaspoon dried chives
  • ¼ teaspoon onion powder
  • ¼ teaspoon sea salt
  • ⅛ teaspoon black pepper
  • ¼ cup apple cider vinegar
  • ⅓ cup olive oil

Directions

  1. Cook pasta according to package directions.
  2. In small bowl, whisk together Dijon, garlic, and dry herbs. Add vinegar. Slowly whisk in olive oil until combined.
  3. Pour half of vinaigrette over warm pasta. Let cool to room temperature.
  4. Add crumbled bacon and tomatoes to pasta; toss to combine. Add more vinaigrette if needed.
