New England Lobster Pasta Salad

Ingredients

  • 1 box Dreamfields Penne Rigate cooked al dente

  • 2 cups lobster meat cooked

  • 1 cup celery diced

  • 1 cup green onions sliced

  • fresh dill (optional)

Dressing

  • 1/2 cup light mayonnaise

  • 1 tablespoon brown spicy mustard

  • 1 tablespoon fresh dill chopped

  • salt and pepper to taste


Directions

  1. Cook pasta according to package directions. Rinse pasta in cold water; drain again. Place in large bowl. Add lobster, celery and green onions to pasta. Set aside.

  2. In a small bowl, combine all dressing ingredients. Gently fold dressing into lobster/pasta mixture.

  3. Chill at least 1 hour. Garnish with fresh dill, if desired and serve.
