Mango Chili Pasta Slaw

Ingredients

  • 1 box Dreamfields Angel Hair Pasta

  • 6 tablespoons extra virgin olive oil

  • 1-1/2 cups panko bread crumbs

  • 3 cups Dreamfields Penne Rigate

  • 3-4 cups red cabbage shredded

  • 1 ripe mango peeled and cut into thin slices

  • 3/4 cup fresh cilantro roughly chopped

  • 1/2 cup chili spiced peanuts chopped (or any spiced nut)

  • 1/4 cup red onion sliced thinly

  • 1 red chili pepper finely diced, seeds removed

Dressing

  • 6 ounces plain nonfat yogurt

  • 2 tablespoons orange juice

  • 1 tablespoon lemon juice

  • 1 tablespoon brown rice vinegar

  • 1 tablespoon olive oil

  • salt and black pepper


Directions

  1. Cook pasta according to package directions. Rinse pasta in cold water; drain again. Place pasta in large bowl; set aside.

  2. Meanwhile, in small bowl, whisk together dressing ingredients; set aside.

  3. Add cabbage, mango, cilantro, peanuts, onion and chili pepper to pasta. Add yogurt dressing; toss to coat pasta completely. If salad is not to be served immediately, refrigerate pasta mixture and dressing separately. Add dressing and toss to coat just before serving.
