Linguine with Tomato, White Bean & Garlic Sauce

Ingredients

  • 8 ounces Dreamfields Linguine (or Dreamfields Spaghetti)

  • 2 tablespoons olive oil

  • 4 anchovy filets

  • 2 tablespoons Gourmet Garden Garlic Stir-In Paste

  • 2 pints grape or cherry tomatoes halved

  • 1 15 oz can small white beans rinsed and drained

  • 3 tablespoons capers

  • 2 tablespoons Garden Gourmet Lightly Dried Parsley


Directions

  1. Cook pasta according to package directions; set aside.

  2. Meanwhile, in large skillet, heat oil over medium heat. Add anchovy filets; cook and stir 2-3 minutes or until anchovies have melted. Add garlic, tomatoes and white beans. Continue cooking 2 to 3 minutes or until tomatoes soften and start to burst, stirring occasionally. Stir in capers and parsley. Remove from heat. Toss with pasta.
