Ingredients

  • 1 box Dreamfields Penne Rigate
  • 2 tablespoons olive oil
  • 2 cups fresh mini portobello mushrooms thinly sliced
  • 2 cloves garlic grated
  • 1 5 oz package fresh baby spinach
  • 1 tablespoon fresh basil chopped
  • 1/4 teaspoon black pepper
  • 1-1/2 tablespoons fresh lemon juice
  • 1/2 cup Parmesan cheese freshly grated
  • crushed red pepper flakes

Directions

  1. Cook pasta according to package directions.
  2. Meanwhile, heat oil in large skillet over medium heat until hot. Add mushrooms and garlic; cook 5 minutes or until mushrooms are almost tender, stirring frequently. Stir in spinach, basil and black pepper; cook 3 to 5 minutes or until spinach is wilted. Stir in lemon juice. Remove from heat.
  3. Add pasta to skillet; toss gently to combine. Add Parmesan; toss. Season with pepper flakes, as desired.
