Ingredients

  • 1 box Dreamfields Elbows
  • 1-1/4 cups Cheddar cheese finely shredded
  • 6 ounces plain Greek yogurt nonfat
  • 1/2 cup non-fat milk
  • 1 1/2 pounds fresh kale coarsely chopped
  • 2 tablespoons ground flaxseed
  • 2 tablespoons shredded Parmesan cheese
  • fresh rosemary

Directions

  1. Prepare pasta according to package directions. Return to pot; do not reheat.
  2. Immediately add Cheddar cheese, yogurt, milk and kale to pasta; stir to mix well allowing cheese to melt and kale to wilt.
  3. Sprinkle with Parmesan cheese and flaxseed, if desired. Garnish with rosemary, if desired.
