Ingredients

  • 1 box Dreamfields Linguine
  • 1 tablespoon canola oil
  • 3 heads broccoli (small, about 6 cups) chopped, stems removed
  • 1 clove garlic minced
  • 1/8 teaspoon salt
  • 14 ounces extra firm tofu excess water drained, cut into 1 inch cubes
  • 1 14 oz can light coconut milk
  • 2 tablespoons lime juice
  • 2 tablespoons red curry paste
  • 1 1/2 tablespoons soy sauce
  • 1 tablesppon fish sauce
  • cilantro (optional)

Directions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, heat canola oil in large sauté pan over medium heat until hot. Add broccoli; toss to coat. Add 1/4 cup water; cover and cook 5 minutes or until broccoli is crisp-tender. Add garlic; cook an additional 2 minutes. Season with salt.
  3. Add tofu, coconut milk, lime juice, curry paste, soy sauce and fish sauce to pan; stir to combine. Bring sauce just to boil; reduce heat and simmer 10 minutes. Remove from heat. Note: Fish sauce can be omitted to make this dish vegetarian/vegan.
  4. Add pasta to pan; toss to coat well.
