Creamy & Dreamy Greek Pasta Salad

Ingredients

  • 1 box Dreamfields Penne Rigate

  • 7 ounces olive tapenade

  • 6 ounces feta cheese crumbled

  • 1 11 oz jar artichoke hearts packed in water, drained, halved

  • 8 ounces grape tomatoes halved

  • 4-6 ounces feta cheese salad dressing divided

  • salt and pepper (to taste)

  • 2 cups baby spinach roughly chopped


Directions

  1. Cook pasta according to package directions. Place pasta in large bowl.

  2. Place tapenade, feta, artichoke hearts and tomatoes in small bowl; stir to combine. Add to pasta; toss to combine well.

  3. Add 4 ounces of salad dressing to pasta mixture; toss to combine. Add salt and pepper, as desired.

  4. Just before serving, fold in spinach. If needed or desired, add 1 to 2 additional ounces of dressing to salad.
