1 box Dreamfields Spaghetti
1 tablespoon olive or grapeseed oil
1/2 sweet onion chopped
2 cloves garlic minced
1 cup low-sodium vegetable stock
3-4 large large tomatoes (or 6-7 plum tomatoes) chopped
1 handful fresh basil leaves chopped
1 cup Parmesan cheese grated or shredded
salt and pepper optional
Cook pasta according to package directions. Drain and keep warm.
Meanwhile, heat oil in sauté pan over medium heat. Add onion and garlic to pan; stir one minute. Add stock, turn off heat.
Place pasta in large bowl. Top with onion-garlic mixture, then tomatoes and basil. Add Parmesan cheese and toss. Season with salt and pepper, if desired.
