Ingredients

  • 1 box Dreamfields Rotini
  • 2 cups fresh blackberries, divided
  • 8 ounces fresh mozzarella cubed
  • 1 cucumber chopped
  • 1 green pepper chopped
  • 2 tablespoons sugar
  • 1 teaspoon ginger ground
  • 2/3 cup apple cider vinegar
  • 2/3 cup extra virgin olive oil
  • salt and pepper to taste

Directions

  1. Prepare pasta according to package instructions. Rinse pasta in cold water; drain again. Place in large bowl; set aside.
  2. While pasta is cooking, heat half of blackberries in small saucepan with the sugar and ginger. Cook over medium low heat for 10 minutes. Remove from heat; cool.
  3. Strain the blackberries through a sieve, then combine with the vinegar and oil. Whisk until smooth.
  4. In a large bowl, combine pasta, blackberry vinaigrette, cucumbers, peppers, cheese and remaining blackberries. Season with salt and pepper, as desired. Serve chilled.
