Argentinian Pasta Salad

Course: Pasta Salad

Makes 4 Servings


Ingredients

  • 1 package Dreamfields Rotini cooked, run under cold water, drained

  • 1 cup extra virgin olive oil

  • 1/3 cup red wine vinegar

  • 5 cloves garlic roughly chopped

  • 2 cups flat leaf parsley packed

  • 1/4 cup fresh oregano

  • 3 tablespoons fresh thyme (heaped tablespoons)

  • 1/2 teaspoon sea salt

  • 1/2 teaspoon freshly ground black pepper

  • 1/4 teaspoon crushed red pepper flakes (add more to taste)

  • 1/2 red bell pepper diced

  • 1/2 yellow bell pepper diced

  • 1/2 orange bell pepper diced

  • 1 Roma tomato diced


Directions

  1. Add ingredients from olive oil to red pepper flakes to a blender and blend until herbs are chopped fine. Allow to set for a few hours in the fridge to meld flavors.

  2. Toss all ingredients together. Eat and enjoy!
