Rotini
Ingredients
- 1 package Dreamfields Rotini cooked, run under cold water, drained
- 1 cup extra virgin olive oil
- 1/3 cup red wine vinegar
- 5 cloves garlic roughly chopped
- 2 cups flat leaf parsley packed
- 1/4 cup fresh oregano
- 3 tablespoons fresh thyme (heaped tablespoons)
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper flakes (add more to taste)
- 1/2 red bell pepper diced
- 1/2 yellow bell pepper diced
- 1/2 orange bell pepper diced
- 1 Roma tomato diced
Directions
- Add ingredients from olive oil to red pepper flakes to a blender and blend until herbs are chopped fine. Allow to set for a few hours in the fridge to meld flavors.
- Toss all ingredients together. Eat and enjoy!
