Angel & Devil Pasta

Directions

1. Cook bacon in large nonstick skillet over medium-low heat until crisp, stirring occasionally. Remove bacon and drain on paper towels; reserve. Measure bacon drippings and return 2 tablespoons to skillet (see note). Add 1 teaspoon butter; cook over medium-low heat to melt butter.
2. Cut onions in half lengthwise, then cut crosswise into thin slices. Add onions to skillet; season with salt and pepper, as desired. Cook, covered, over low to medium-low heat about 10 to 12 minutes or until onions are tender, stirring occasionally. If necessary, small amounts of water may be added if mixture begins to stick. Uncover and cook over medium to medium-high heat about 5 minutes until golden in color and caramelized as desired. Watch carefully; do not burn. Remove from heat.
3. Meanwhile, cook pasta according to package directions. Drain and add to skillet with onions; toss, adding additional butter to taste, if desired. Add reserved bacon; toss. Add 1/3 cup cheese and toss again. Sprinkle with additional bacon and cheese, if desired, and parsley before serving.

Note: If bacon does not yield 2 tablespoons drippings, add enough butter to make 2 tablespoons.
