Rotini with Ground Beef & Spinach

Ingredients:
1 box Dreamfields Rotini, Penne Rigate or Elbows
1 tablespoon olive oil
1 cup chopped onion
3 large cloves garlic, minced
1 pound (90%) lean ground beef
1 can (8 ounces) no salt added tomato sauce
1 teaspoon dried oregano
1 package (10 ounces) spinach leaves, shredded
1/4 cup shredded fresh basil or 1 tablespoon dried
1/2 teaspoon crushed red pepper flakes
Salt (optional)
1/3 cup shredded Parmesan cheese

Directions:

  1. Cook pasta according to package directions.
  2. Meanwhile, heat oil in large heavy skillet over medium heat. Cook onion and garlic 5 minutes, stirring occasionally. Add beef; cook until no longer pink, stirring and breaking beef into pieces.
  3. Stir in tomato sauce and oregano. Continue cooking 5 minutes, stirring frequently. Add spinach, basil and red pepper flakes; continue cooking 3 minutes. Season with salt, if desired.
  4. Drain pasta. Add to skillet; toss with beef mixture. Sprinkle with Parmesan cheese.

Makes 6 main dish servings.

Note: A 10-ounce package of frozen chopped spinach thawed and well-drained can be substituted for fresh spinach.

    My husband was just recently diagnosed with diabeties. I was using wheat pasta with our pasta meals, but found this brand online and liked it much better. Made this dish and it was delicious!! Used ground turkey breast instead of ground beef. My husband and my family loved it!!

    This was a very tasty meal. I have been diabetic for 12 years and pretty much gave up pasta then I find this pasta and it was very good and the carbs did not effect my blood sugar very much.

    This is a very tasty meal that I make often because my husband loves it so much. I find that I have to add more tomato sauce than the recipe calls for.

    I have been a diabetic for 13 years and was afraid to eat pasta. My family back round is Italian and as you know we love pasta. My husband found this pasta and it is great it doesn't taste like cardboard. I'm in heaven! I love love love it!!

    My husband was also recently diagnosed with diabetes so tried this dish. It was fast, easy and delicious! It also reheated very well the next day in the microwave. I used ground turkey, and a 14.5 oz can of diced tomatoes since I had no tomato sauce.
