Ingredients:
1 package Dreamfields Elbows
1 tablespoon olive oil
1/4 cup chopped white onion
1 clove minced garlic
1 tablespoon chopped fresh parsley
1 1/2 cups half & half
1 cup 1% milk
1 teaspoon each salt, pepper and nutmeg
Nonstick cooking spray
1 1/2 cups fontina cheese, shredded
1 cup non-fat cheddar cheese
2 tablespoons Parmesan cheese
Directions:
- Heat oil in 12-inch skillet over medium heat; sauté onion, garlic and parsley for 3 to 5 minutes, stirring occasionally. Add half & half and milk, season with salt, pepper and nutmeg. Cook for 10 minutes, stirring occasionally.
- Meanwhile, cook pasta according to package directions. Pre-heat oven to 425-degrees F. Spray a 9×13-inch casserole baking dish with nonstick cooking spray.
- Toss pasta and sauce together. Add fontina and cheddar cheeses; stir until well blended and pour into casserole dish. Top with Parmesan.
- Bake uncovered for 20-25 minutes or until golden brown. Let cool for 5 minutes before serving.

With all the other high-fat ingredients…why require non-fat cheddar? Silly.
Use fat free half & half and 2% shredded cheese to reduce the fat

What can be substituted for the Fontina cheese if it’s not available in my area?
Try any cheese that melts easily, mozzarella could work well.
Maybe because lower fat cheeses don’t melt as well as those with fat.
Mac and cheese needs to be creamy.
I love pasta and I have type 2 diabetes. A friend recommended I try this pasta for I hate whole wheat pasta and all the others I have tried. Dreamfields is fantastic! Thank you!
2% cheese melts just fine. And if you eat this as a side dish in the small portion it's not that bad. A plateful on the other hand…..
This recipe used to be on the old Dreamfields Box. I make it all the time for my family.
All kinds of easy mods are available. Cut out the milk and add cream to reduce the sugar. Any kinds of cheese will work from Mozzarella to Mexican Cheese blends. I also use a lot more than 2 oz.s Parmesan
The long shallow pan allows for more of the tasty top. This is a Christmas buffet dinner dish.
I'm pre-diabetic and watch my sugars and carbs constantly. When I go to the grocery store and I see Dreamfields on the shelf I always pick up a box or two of each. I am also part Italian and grew up eating pasta all the time. It's a hard habit to break. I'm so glad I can be healthy and happy too. Thanks Dreamfields!!! Oh, the Mac & Cheese recipe sounds ok to me. I will give it a try and substitute as much lower fat products as possible but I have to agree with another commentor that said "needs to be creamy"…..what's the point if it's not?
