Rotini Pasta and Veggie Dinner
Feel free to add more of your favorite seasonal veggies to this dish to benefit from even more healthy fiber. Serve as-is or add alongside your favorite meat or seafood for a heartier meal.
Ingredients:3 cups
Dreamfields Rotini pasta (dry)
2 tablespoons olive oil
1 red pepper, cut into thin slices
1 green pepper, cut into thin slices
1 onion, cut into thin slices
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 clove garlic
1 16-ounce canned tomatoes, diced and not drained
1/2 cup pasta sauce of your choice
Directions:- Prepare Dreamfields Pasta according to package directions.
- Meanwhile, in a large skillet over medium heat, add the olive oil. Toss in the sliced peppers, onions, salt, pepper and spices and sauté for 5 minutes, stirring often to avoid any burning. Add the canned tomatoes and pasta sauce to the skillet and toss with the onions and peppers mixture. Cook for about 5 minutes until thickened.
- Toss the pasta with the vegetable sauce until well coated and serve.
Makes 6 servings. Serve with chicken, beef or pork.
