Welcome Home Mac & Cheese
Serves 6

Welcome Home Mac & Cheese 16 ounces
3 tablespoons
1/4 cup
1 clove minced
1 tablespoon
1 1/2 cups
1 cup
1 teaspoon each
3 tablespoons
1 1/2 cups
1 cup shredded
2 tablespoons
Dreamfields Elbows
olive oil
chopped white onion
garlic
chopped fresh parsley
whipping cream
milk
salt, pepper and nutmeg
butter
fontina cheese, shredded
yellow cheddar cheese
Parmesan cheese

  1. Heat oil in 12-inch skillet over medium heat; sauté onion, garlic and parsley for 3-5 minutes, stirring occasionally. Add cream and milk, season with salt, pepper and nutmeg. Cook 10 minutes, stirring occasionally.
  2. Meanwhile, cook pasta according to package directions. Pre-heat oven to 425 F. Grease a 9x13-inch casserole baking dish with butter.
  3. Toss pasta and sauce together. Add fontina and cheddar cheeses; stir until well blended and pour into casserole dish. Top with Parmesan.
  4. Bake uncovered for 20-25 minutes or until golden brown. Let cook 5 minutes before serving.

This linguini carbonara recipe is guilt-free, yet delicious!

Linguini Carbonara
Serves 6

Linguini Carbonara 16 ounces
1 tablespoon
6 strips
4 large
2 teaspoons
1/2 cup

Dreamfields linguini (or spaghetti)
extra-virgin olive oil
good quality bacon, diced
eggs, at room temperature
fresh thyme leaves, chopped
freshly grated Parmesan cheese
Salt and freshly ground pepper, to taste

  1. Cook the linguini according to directions.
  2. In a small skillet heat the olive oil and cook the bacon until crisp.
  3. In a large metal bowl beat the eggs. Beat in the thyme and cheese.
  4. When the pasta is done, drain and add immediately to the egg mixture.
  5. Add the bacon-olive oil and toss well until the sauce thickens.
  6. Season to taste with the salt and pepper.
    Serve immediately in warm bowls.

Pasta with Broccoli, Ham and Cheese
Serves 6 to 8

Pasta with Broccoli, Ham and Cheese 16 ounces
1

2 tablespoons
6 ounces
1/2 cup

Dreamfields Penne Pasta
head fresh broccoli (or 1 10-ounce package frozen broccoli)
olive oil
ham, cut into small strips
grated Parmesan cheese
Salt and freshly ground black pepper, to taste

  1. Cook the pasta according to package directions.
  2. Wash and trim the broccoli florets away from the stems.
  3. Cook the fresh (or frozen) broccoli in a small amount of water in the microwave for 3 to 4 minutes, or until "crisp-tender." Drain and season with salt and pepper.
  4. Heat the oil in a small skillet and add the ham and broccoli florets Cook for 1 minute, stirring.
  5. Toss the ham-broccoli mixture into the hot pasta with the cheese.
  6. Taste and correct the seasonings.
    Serve immediately.
