Dreamfields pasta cooks like traditional pasta and can be substituted easily into most recipe favorites. As with any pasta, cooking it “al dente,” or firm to the tooth, provides a quality most consumers prefer. Overcooked pasta ends up mushy and sticky. Cooking Dreamfields to the recommended cook times also will help retain the unique qualities that come from its protected carbs.

First, how much pasta should you use?
Different pasta shapes yield different amounts of cooked pasta. A recommended serving size is 1 - 1 1/2 cups per person. Use our handy chart to determine how much pasta to cook.


Give our cooking tips a try.

  • Use a large pot and plenty of water. For every pound of pasta, use at least 4 quarts of water.
  • Bring water to a full boil before adding pasta.  Add salt, if desired.
  • Add pasta to boiling water gradually to prevent a boil-over, and stir gently.
  • Cook uncovered at a constant boil, stirring occasionally.
  • Test 2 minutes before recommended cook times on package to check for preferred tenderness. For best eating, pasta should be tender but still firm to the bite.
  • Drain well before adding sauces or other ingredients.
  • Do not rinse the pasta for hot dishes - the small amount of starch leftover from cooking can help make sauces cling better. If using pasta in a cold salad, however, rinse your pasta immediately to stop the cooking action.
  • When serving hot, reserve 1/2 cup pasta cooking liquid to use if needed to thin a sauce.

Tips for Storing & Reheating

For today's pasta meal: cook just enough for one meal, if possible.
  • The recommendation is to cook the amount of Dreamfields that you plan for one sitting. Because pasta takes only about 10 minutes to cook, the next day's meal is quick-to-prepare, even without leftover cooked pasta.
  • To prepare the pasta dish: Mix the sauce with Dreamfields just prior to serving. Note: High acidic sauces, such as tomato sauce, may break down the protected matrix around the carbohydrate over time. This doesn’t occur in a typical mealtime; however if the pasta meal is stored as a leftover and reheated, the matrix may break down. The amount of acidity in the sauce, the length of meal storage time, and the temperature and time of reheating all can have an effect.
For lasagna dishes: prepare as the Dreamfields' recipe directs.
  • Dreamfields lasagna can tolerate high-acid ingredients better than other Dreamfields pasta shapes because it’s thicker. Cheese, another ingredient in lasagna, also helps protect starch granules by helping to buffer the acid in tomato sauce. That makes it less acidic than typical spaghetti and tomato sauce.
  • Dreamfields lasagna has been prepared using the package recipe and tested. The results show the digestible carbs to be 5 grams per serving.
For leftover pasta: store separately.
  • Leftover pasta is best stored separately from the sauce. Lightly drizzle the pasta with a small amount of light vegetable oil to keep the pasta from sticking. Reheat it separately from the sauce on low heat or a low microwave setting. Even with these precautions the protective matrix could be compromised, depending on food preparation and storage conditions.
For cold pasta salads: stop the cooking action.
  • As with any pasta in a cold salad, rinse in cold water immediately after cooking to stop the cooking action. This also helps keep the Dreamfields protein-fiber microstructure around the starch granules intact. Note: Chilling slows water absorption that breaks down the starch granules.
